Mexican rice

I don’t usually like rice because it’s bland, so I am always looking for ways to introduce some bold flavors into rice. I created this recipe using all Mexican flavors, and added turmeric to give it its signature yellow color.  This Mexican – inspired rice is flavorful and zesty.   Family approved!

You will need:
1 cup rice (basmati or plain long grain)
1 tsp. turmeric
juice of half a lime
1 yellow onion, chopped
2 cloves garlic, chopped
1 green pepper, chopped
1 green jalapeño pepper, chopped
2 medium tomatoes, chopped
chopped cilantro for garnish
pinch cayenne pepper
salt to taste

Cover 1 cup of rice with 2 cups of water, salt, turmeric and lime juice.  Cook according to package directions.  In a sauté pan, sauté onions over medium high heat for 2 – 3 minutes.  Add garlic, peppers, and tomatoes.  Add salt and cayenne.  Sauté for 5 minutes, until vegetables are soft, stirring frequently.  Add cooked rice to the pan and mix well.  Remove from heat and garnish with cilantro.
