These cheesy treats are a family favorite. The original recipe is here.
You will need:
1.5 lbs chicken breasts or tenders, diced into small pieces
1/3 cup mayonaise
1/3 cup flour
4 oz your favorite shredded cheeese
Salt and pepper to taste
Oil for frying
In a bowl, combine eggs, mayo, flour, cheese, dill, salt and pepper. Pour over diced chicken and stir until well combined. Marinade in the fridge for at least 2 hours. Heat oil in a pan over medium heat. Add the chicken mixture one table spoon at a time (similar to making small pancakes). Pat down to flatten them. Sautee for 4 minutes on each side, until golden brown and fully cooked. Repeat with the remaining mixture.
